19 ozs ripe Mangoes (flesh)
2 Tbsps water
2 Tbsps lemon juice
2 cups sugar
2 Passion fruit

Product recommendation
Wash the jars in hot soapy water, rinse well and put in a low oven to dry and become warm.

Preparation steps

Put the mango, water and lemon juice into a large pan. Bring to a simmer and cook gently for about 10 minutes, until the fruit is soft.

Add the sugar and stir over a low heat until the sugar has dissolved. Bring to a boil and cook rapidly

until setting point is reached. To tell when setting point has been reached: remove the pan from the heat and put a little of the boiling mixture on a chilled saucer.
