For the cupcakes
¼ cup Avocados (mashed)
½ cup apple sauce (unsweetened)
2 eggs (2 whites and one yolk beaten)
½ cup self-rising flour (wheat and sifted)
½ cup Almond flour (sifted)
¼ tsp Baking powder (sifted)
1 Passion fruit
For the topping
½ cup Almond butter
¼ cup cocoa powder
5 Tbsps milk (or non dairy)
3 Tbsps Maple syrup
3 Passion fruit

You can substitute the almond butter for cashew butter, peanut butter or sunflower butter . This will change the flavor

Preparation steps

1.

For the cupcakes: heat the oven to 350°F Grease 2 x 12 mini muffin pan

Beat the avocado and applesauce in a mixing bowl until light and creamy. Gradually beat in the eggs until well blended.

Sift the almond flour, wholewhat flour and baking flour togrther. Then fold in gently  to the egg mixture until just combined.

Using a teaspoon, scoop all the flesh, juice and seeds from the passion fruit into the mixture and gently stir until combined.

Spoon into the muffin pans and bake for 10-15 minutes until golden and springy to the touch. Place on a wire rack to cool completely.

For the topping: in a microwaveable bowl, add the almond butter and heat for 15-20 seconds, or until almond butter is thin and you can stir it

Add to the bowl the cocoa powder, milk and maple syrup. Stir until smooth. There should be no lumps. Spoon a bit over thr top of each cupcake

Using a teaspoon, scoop all the flesh, juice and seeds from the passion fruit into the mixture and gently stir until combined.

Spoon over the cakes and leave to set.
