Tropical Fruit Meringues

Preheat the oven to 140°C (120°C in a fan oven), 275°F, gas 1 and line a baking tray with grease-proof paper.
Whisk the egg whites until stiff, add 3 tbsp water and continue whisking. Gradually add the sugar while whisking, then, still stirring, add the vinegar followed by the sieved cornflour.
Gently place the mixture in four mounds on the baking tray, making a small dip in the centre of each one, and bake in the oven for around 50 minutes. Leave in the oven to cool completely.
For the topping, stir the mascarpone with the sugar until smooth, then fold in the whipped cream. Divide this mixture between the pavlovas and garnish with passion fruit. Sprinkle with a little brown sugar and serve.
