Peel outer layer of white asparagus and bottom third of green asparagus. Cut both diagonally into slices. Blanch white asparagus in salted water for 5 minutes. Add green asparagus and boil for about 5 more minutes. Squeeze and drain.

Rinse and trim lettuce. Mix tomatoes with almonds and some tomato oil and blend in a food processor. Season with lemon juice, salt and cayenne pepper. Rinse cilantro, pluck off leaves and pat dry.
3.
Heat tortilla briefly and spread with tomato sauce. Cover with lettuce, sprinkle with cilantro and top with asparagus. Fold and serve.
