Preparation steps

1.

Score the tomatoes crosswise, then blanch in boiling water. Rinse the tomatoes in cold water, peel, and finely dice. Remove the core also (if using canned tomatoes, coarsely chop them). 

2.

Rinse and trim the carrot and celery, then coarsely chop. Finely dice the garlic. Heat the oil in a saucepan. Sauté the garlic and the vegetables until soft. Stir in the tomatoes. Remove the leaves from the rosemary, crush lightly, then mix into the sauce. 

3.

Season the sauce to taste with salt, pepper, and sugar. Cover the pan and simmer for 1 hour over medium heat, stirring constantly. 

4.

Pass the sauce through a fine strainer or food mill. Chop the basil leaves finely, mix into the sauce, and serve.
