4 Tofu (About 5 cm length, 3 cm in height)
4 Tbsps soy sauce
50 grams shiitake mushrooms
50 grams
50 grams soybean sprout
3 Tbsps sesame oil
salt
freshly ground pepper
½ tsp soy sauce
Rice vinegar
Fish sauce
sesame oil (to fry)

Preparation steps

1.

Using a small, sharp knife hollow out the inside of the tofu square leaving a small open box shape. Discard or reserve the trimmed tofu. 

2.

Drizzle the tofu with 4 tablespoons soy sauce and let marinate for 30 minutes.

Heat 2 tablespoons sesame oil in a pan and saute the tofu boxes on all sides until browned. Set aside and keep warm.

Clean mushrooms and cut into thin strips. Heat 1 tablespoon of sesame oil in a pan and saute the mushrooms for 3 minutes. Stir in the sprouts, 1/2 teaspoon soy sauce, rice vinegar and fish sauce. Season with salt, pepper.

5.

Spoon the mushroom mixture into the hollowed out tofu and serve.
