- 16 large Mushrooms
- 1 large Zucchini (finely diced)
- 1 red pepper (finely diced)
- 1 yellow pepper (finely diced)
- 1 clove garlic cloves (finely chopped)
- 3 Tbsps olive oil
- 6 small rosemary
- Rock salt
- Black pepper

Tip: You can also substitute ham for other seasonal meats such as cold turkey, cold pork or chicken.
Preparation steps
1.
Wash and dry the mushrooms and carefully remove the stalks.
2.
In a pan heat 2 tbsp of the oil and then add the garlic and fry for a minute. Add the vegetables, and season with salt and pepper and cook for 5 minutes.

Preheat the oven to 190°C (170° fan) | 375F | gas 5.

With the remaining oil grease a large (or 2 large) flat dishes and arrange the mushrooms, hollow side upwards.
5.
Fill the mushrooms with the vegetable mixture. Cook in the oven for 35-40 minutes.
6.
Serve hot, garnished with sprigs of rosemary.
