- 12 field Mushrooms
- 4 Tbsps olive oil
- 1 Leek (finely sliced)
- 6 shallots (peeled and chopped)
- 2 cloves garlic cloves (chopped)
- 5 ozs Bacon (chopped)
- 1 tsp Dijon mustard
- 2 Tbsps parsley
- 1 Tbsp freshly chopped thyme
- 1 Tbsp chopped rosemary
- ½ cup Stilton cheese (diced)
- ¾ cup Cheddar cheese (grated)
- Crouton (to garnish)

Preparation steps

Preheat the oven to 200ºC (180º fan) 400ºF, gas mark 6.

Remove the stems from the mushrooms and chop them finely. Set the mushroom caps upside down in an ovenproof dish.

Heat the oil in a frying pan and gently cook the leek, shallots and chopped mushroom stems until soft but not brown. Add the bacon, cook until it is lightly browned then stir in the mustard and herbs. Season with salt and pepper and mix in the Stilton.

Pile the mixture onto the upturned mushroom caps and scatter over the Cheddar cheese. Bake in the oven for 12 - 15 minutes, basting with the juices from time to time. Serve with the croutons scattered over garnished with the rosemary sprigs.
