- 175 grams softened butter
- 4 Anchovy fillet (in salt)
- 1 Tbsp Caper (from a jar)
- ½ handful parsley
- ½ handful Chives
- ½ shallot
- 3 Tbsps medium hot Mustard
- Sea salt
- freshly ground peppers
- 1 splash lemon juice
- 4 T bone steaks (each about 350-400 grams)
- 2 Tbsps olive oil
Preparation steps

Melt butter in a small bowl until creamy. Rinse anchovies and capers, pat dry and chop finely. Rinse parsley and chives and shake dry. Cut chives into small rings, finely chop parsley leaves. Peel shallot and chop finely. Combine anchovies, capers, herbs and shallots with mustard and butter. Season with salt, pepper and lemon juice and mix well. Refrigerate for 30 minutes.

Rinse steaks, pat dry and season with salt and pepper. Heat oil in a pan and sear meat for about 1 minute per side. Cook for 3-5 minutes more, turning occasionally. Remove from oven and let rest briefly. Top with herb butter and serve.
