Preparation steps

Place steaks on a platter and season both sides with salt and pepper.

Prepared the grill for direct grilling and preheat to high.

When ready to cook, brush the grill grate with oil. Arrange the steaks on the hot grill grate and grill 4 to 6 minutes per side for medium-rare (145º F on an instant read thermometer), or until desired doneness.

Transfer steaks to a serving platter or individual plates and allow to rest for about 3 minutes. Season to taste with freshly ground black pepper and serve.
