For the pancakes
3 eggs
1 ½ cups all-purpose flour
1 cup milk
butter (for frying)
For the filling
1 cup ground Walnut
2 Tbsps raisins
cup double cream
2 Tbsps sugar

Preparation steps

For the pancakes, whisk the eggs with the flour, milk and a pinch of salt. Rest for around 20 minutes.

Meanwhile, for the filling, mix the ground walnuts with the raisins, double cream and sugar. Taste to check the flavour balance.

Heat a little butter in a frying pan (approx. 18-20 cm in diameter). Use a ladle to add 1/4 of the batter to the pan. Tilt the pan to spread the mixture evenly. Fry for around 3 minutes over a moderate heat then use a lid or flat plate to turn the pancake and finish cooking. Make 4 pancakes in this way. Keep the finished pancakes warm in the oven (approx. 70°C, 160°F, gas low).

To serve, spread the pancakes with the nut mixture then roll up and place on plates. Serve with chocolate sauce if desired.
