- 7 Tbsps Spelt flour
- salt
- 2 tsps ground Turmeric
- 2 Tbsps melted butter
- 2 eggs
- 6 ozs 2% milk
- 1 Tbsp Canola oil
- 9 ozs cream cheese
- 4 ozs Sour cream
- peppers
- Nutmeg
- 2 carrots
- 2 splashes lemon juice
- wooden skewers
Preparation steps
Mix flour with salt and turmeric. Mix butter, eggs and milk well and add flour mixture. Stir until smooth to a smooth dough and let it swell for 10 minutes.
Brush a hot pan with a little oil. Add 1-2 tbsp. of dough and bake on each side for 1-2 minutes to a thin crêpe until golden brown. Take out and put aside. Proceed in this way until the dough is used up.
In the meantime, stir the cream cheese and sour cream until smooth and season with salt, pepper, and freshly grated nutmeg. Clean, peel and wash the carrots, grate very finely and mix with lemon juice.
Place 1 crêpe on each sheet of baking paper and spread with 1 tablespoon of the cream cheese mixture. Add some grated carrots and roll up the crêpe. Cut the rolls diagonally into small rolls about 1-inch wide and fix them with small wooden skewers.
