4 Prickly Pear
1 cup caster sugar
¾ tsp cinnamon
3 Tbsps lemon juice
½ cup butter

Suggested variation; Try Nashi (Asian) pears instead or regular Conference pears instead. If using Conference pears be sure to peel carefully and stand upright in the slow cooker.

Preparation steps

1.
Wash the prickly pears thoroughly and place in the slow cooker.
2.
Mix the sugar, cinnamon and lemon juice together. Rub over the prickly pears, making sure the fruit is properly covered.
3.
Cut the butter into chunks and scatter evenly around the pears in the pot.
4.
Replace the lid and cook on a low setting for 4 hours.
5.
Once cooked leave to cool slightly and arrange on a plate.
6.
If the cooking liquor is a little thin reduce in a pan to a syrupy consistency. Spoon the cooking sauce around the pears and serve.
