Sweet pancake rolls can also be prepared with other nut puree: Almond puree or cashew puree are also well suited. If you prefer, replace the spelt flour type 1050 with wholemeal flour, which provides even more fiber.

5 ozs milk (low fat)
3 eggs
3 ½ ozs whole spelt flour
1 pinch salt
2 tsps Canola oil
2 Tbsps hazelnut kernels
3 ½ ozs Hazelnut butter
1 Tbsp dark cocoa powder
4 tsps Maple syrup
4 Banana

Preparation steps

1.

Mix milk with eggs, flour and 1 pinch of salt until smooth. Heat oil in a frying pan. Fry 4 golden brown pancakes (approx. 7 inches Ø) from the batter, one after the other, over low to medium heat. Stack on a plate and let cool.

Roast nuts in a pan without fat over medium heat for 3 minutes. Allow to cool and chop.

Mix hazelnut paste with cocoa powder and 2 tsp. maple syrup until smooth. Coat pancakes with it. Peel bananas, place on top, roll up, and cut into pieces approx. 1-inch wide.

4.

Arrange sweet pancake rolls on plates, drizzle with remaining maple syrup and sprinkle with hazelnuts.
