Ingredients

For the pudding (mold holding 1-1.5 liters)
250 grams Pearl barley
150 grams sugar
2 Tbsps butter
1 lemon
150 grams Whole Wheat Bread
3 eggs
2 Tbsps breadcrumbs
500 grams Berry

Preparation steps

1.

Soak grains soak in water overnight. Drain. Heat with 1 tablespoon sugar and 300 ml (approximately 1 1/4 cup) of water and swell for 30 minutes over low heat. Stir in 1 tablespoon butter and cool.

Finely grate lemon zest and squeeze out juice. Crumble bread. Separate eggs and beat egg whites until stiff.

Mix egg yolks, lemon juice and lemon zest with 100 grams (approximately 3 ounces) of sugar. Add crumbled bread and grains. Fold in eggs.

Grease pudding mold and sprinkle with breadcrumbs. Add pudding mixture, close mold and place in a large pot. Cover pudding mold in water, close pot and simmer gently for 90 minutes.

5.

Meanwhile, rinse berries and trim. Boil with 1/4 liter (approximately 1 cup) of water and remaining sugar. Remove from heat and cool.

6.

Cool pudding in mold for 30 minutes. Flip onto a serving plate and serve lukewarm with berry compote.
