cup Dark chocolate (minimum 60% cocoa solids, chopped)
4 large eggs

0.333 cup superfine caster sugar

Preparation steps

1.
Preheat the oven to 200°C (180° fan) | 400F | gas 6 and put a baking tray in to heat. Oil 4 small mugs then dust the insides with a little caster sugar.
2.
Melt the chocolate in a microwave or bain-marie and leave to cool. Separate the eggs and stir the egg yolks into the melted chocolate.
3.
Whip the egg whites to stiff peaks, then stir (1/4) of the egg whites into the chocolate mixture.
4.
Pour the chocolate mixture into the egg white bowl and carefully fold together until evenly mixed.
5.
Divide the mixture between the mugs and level the tops, then transfer them to the heated baking tray and bake for 12-15 minutes or until well risen. Serve immediately.
