- 1 shallot
- 1 garlic clove
- 125 grams Zucchini
- 300 grams Beefsteak tomato
- 2 Tbsps Peanut oil
- 1 Tbsp cilantro
- 1 Tbsp White vinegar
- 1 Tbsp honey
- 1 Tbsp lemon juice
- 1 pinch cayenne pepper
- salt
- freshly ground peppers

Preparation steps

Peel and finely chop the shallot. Peel the garlic, and pass through a press. Rinse the zucchini. Blanch the tomatoes in boiling water, and rinse. Peel, quarter, and remove the seeds. Finely dice the zucchini and tomato into 1/2 cm (approximately 1/4 inch) pieces. Add all the ingredients to a pot, and mix thoroughly.

Add the oil, cilantro, vinegar, honey, lemon juice, cayenne pepper, salt, and pepper to the vegetables. Bring to a boil, and serve either hot or cold.
