- 24 ozs boneless, skinless Chicken breasts
- 6 Tbsps lemon juice
- 1 cup Lemon infused olive oil
- 2 tsps Curry powder
- 1 Tbsp honey
- ½ tsp White pepper
- 10 Skewer (metal or wooden)
- 2 fresh lemons (cut into wedges)
- 1 Tbsp Oil (for grill grate)
- salt (to taste)
Preparation steps

Rinse the chicken under cold running water and pat dry with paper towels. Using a sharp knife cut into 32 pieces. Place the chicken in a large plastic storage bag.

In a small bowl, combine the lemon juice, olive oil, curry powder, honey and pepper, whisking to blend. Pour the marinade into the plastic storage bag. Seal bag securely; squeeze the bag several times to thoroughly coat the chicken. Refrigerate for at least one hour.

When ready to cook prepare grill for direct grilling. Preheat to high.

Thread four pieces of chicken onto 8 skewers. Thread lemon wedges from 1 lemon onto remaining 2 skewers. Brush the grill grate with oil. Place kebabs on hot grate and grill until cooked, 2 to 3 minutes on each side. When done, the chicken will be firm to the touch and turn white.
5.
Transfer kebabs to serving platter. Place skewered lemon wedges on the grill and cook for about 1 minute on each side. Serve kebabs garnished with lemon wedges.
