Ingredients

For the burgers
1 day-old Bread roll
1 onion (finely chopped)
1 garlic clove (finely chopped)
Oil (for frying)
2 eggs
1 Tbsp fresh Basil (chopped)
4 cups minced lamb
breadcrumbs
For the filling
½ red pepper (finely diced)
½ green Zucchini (finely diced)
½ yellow Zucchini (finely diced)
2 Tbsps black Olives (pitted and chopped)

Preparation steps

Soften the roll in lukewarm water and fry the onion and the garlic in 1 tbsp oil. Remove from the heat and leave to cool slightly.
2.
Wring out the roll and mix it with the eggs, basil, onion, garlic and the meat. If necessary add breadcrumbs until the mixture can be shaped and is not too soft. Season with salt and ground black pepper.
3.
To make the filling mix everything together and season with salt and pepper. Shape the meat dough into balls and press a well into each one. Place 1 tbsp of the vegetable filling in each well and reform the dough into a ball. Fry in hot oil on all sides for 5-6 minutes until golden brown.
4.
Goes well with potato gratin.
