- 3 egg whites
- ⅔ cup caster sugar

- 1 tsp Corn starch
- 3.333 cups Plum (stoned and halved)
- ⅜ cup Port wine
- ⅔ cup soft light brown sugar
Preparation steps

Pre-heat the oven to 200°C | 400F | gas 6.

Place the plums, port and light soft brown sugar in a saucepan and bring to a simmer. Lower the heat, cover, and cook gently for 15 minutes.

Remove the cover from the and increase the heat and let the juice reduce by half.

Whisk the egg whites in a large clean bowl to soft peaks and then add half of the sugar, a tablespoon at a time, whisking really well between each addition.

Add the cornflour and continue to whisk, and add the remaining half of the sugar by the tablespoon, whisking as before until you have a thick glossy meringue.
6.
Spoon the plums into 4 individual ceramic baking dishes roughly 4 inches in diameter. Spread the meringue evenly on top of the plums and use a palette knife to form little peaks on top.
7.
Bake for 20-25 minutes until golden brown on top and then remove from the oven. Serve hot.
