large, red Bell pepper (cut lengthwise into 1/2-inch wide strips)

large, yellow Bell pepper (cut lengthwise into 1/2-inch wide strips)

large, green Bell pepper (cut lengthwise into 1/2-inch wide strips)
2 cloves
garlic (sliced)
1 sprig
fresh rosemary
¼ cup
coarse salt (to taste)
freshly ground Black pepper (to taste)
1 teaspoon
pink peppercorns (slightly crushed)
¼ cup
fresh Basil leaves (for garnish)

Preparation steps

Step 1/2
Heat oil in a heavy skillet over medium-low heat. Add onions, pepper strips, garlic and rosemary, and saute until onions and peppers are tender, about 35 to 40 minutes. Mix in vinegar, season with salt, pepper, and peppercorns, stir well and saute for another minute.

Serve hot, warm or cold. Garnish with fresh basil leaves.
