- 1 kilogram Bell pepper (red, yellow, green)
- 400 grams Beefsteak tomato
- 1 onion
- 2 Tbsps olive oil
- 2 tsps sweet ground paprika
- salt
- freshly ground peppers
- parsley (for garnish)

Preparation steps
1.
Cut the peppers in half lengthwise, remove the seeds and ribs and cut into large cubes.

Blanch the tomatoes in boiling water, drain, peel and remove the stems, then roughly chop. Peel and halve the onion and chop finely.
3.
In a wide pot, heat the oil and saute the onion. Sprinkle the paprika over the onion, then add the tomatoes, season with salt and pepper and cook over high heat for about 3 minutes until some of the liquid has evaporated. Reduce the heat, cover and simmer for about 20 minutes over low heat. Season to taste and serve garnished with parsley.
