- 500 grams waxy potatoes
- 6 shallots
- 2 garlic cloves
- Bell pepper (1 yellow and 1 green)
- 6 medium-sized Tomatoes
- 100 milliliters olive oil
- 200 milliliters dry white wine
- salt
- freshly ground peppers
- 1 tsp freshly chopped thyme
- Basil (for garnish)

Preparation steps

Rinse, peel and dice potatoes. Peel shallots and garlic. Cut shallots lengthwise into thin slices and finely chop garlic. Rinse and halve peppers, remove seeds and ribs and roughly chop. Blanch tomatoes in boiling water for a few seconds, then rinse, peel, quarter and remove seeds.

In a pot, sauté prepared vegetables in hot oil for a few minutes. Add wine, season with salt and pepper, cover and cook about 35 minutes over low heat. Finally, stir in thyme, season to taste and serve sprinkled with basil.
