1 Tbsp Whole Grain Spelt Flour
5 ozs Cheddar cheese

Preparation steps

Cook macaroni in boiling salted water according to package directions until al dente. Then drain and let drain. Meanwhile, slowly defrost spinach in a saucepan over low heat for 5-10 minutes. Add milk, heat and puree.

Melt 1 tablespoon of butter in a saucepan. Sauté flour in it over low heat for 2-3 minutes, stirring until light. Add spinach milk and simmer for 10 minutes, stirring occasionally. In the meantime grate cheese. Stir half of it into the sauce, season with salt and pepper, remove from heat and let cool for 5 minutes.

Grease muffin tin with remaining butter. Chop walnuts. Add the pasta with the egg to the sauce and mix well. Divide the mixture between the cavities of the muffin tin, add the remaining cheese and walnuts, and bake the small gratins in a preheated oven at 180 °C / 350 °F for about 25 minutes. Then remove from the oven, let cool for 5 minutes, remove from the pan, and serve.
