1 Tbsp good-quality olive oil
1 onion (peeled and diced)
4 cloves garlic cloves (peeled and chopped)
Chili flakes (to taste)
¼ cup white wine
3 cups canned, crushed Plum tomato
½ tsp oregano
1 lb Linguine
salt (to taste)
freshly ground Black pepper (to taste)
¼ cup sun-dried tomatoes (packed in oil)
3 cups shrimp (peeled and deveined)
½ cup chopped, fresh Fresh herbs (parsley, basil, cilantro, etc.)

Preparation steps

Heat the oil in saucepan, set over medium heat. Add the onion and saute until tender and translucent, about 5 to 7 minutes. Add the garlic and chili pepper flakes and saute until fragrant, about a minute. Add the white wine and simmer for 5 minutes. Add the tomatoes and oregano and simmer until the sauce just starts to thicken, about 15 minutes.

Meanwhile, cook the pasta according to package directions, until al dente.

Season the tomato sauce to taste with salt and pepper.

Drain the sun-dried tomatoes and chop into bite-size pieces. Add the sun-dried tomatoes and shrimp to the tomato sauce and simmer for 4 to 6 minutes, or until the shrimp is cooked through. Remove the tomato sauce from the heat and mix in the fresh herbs.
5.
Drain the pasta, toss in the tomato sauce, divide among plates and serve hot.
