1 lemon (juiced)

300 grams Unsmoked Bacon (such as Speck Alto Adige or Bacon)
1 onion

Preparation steps

Cook the linguine in boiling salted water until al dente. Dice the bacon. Peel and finely chop the onion. Heat 2 tablespoons of butter in a pan, and sauté the onion gently. Add the pine nuts and bacon, and sauté briefly. Season to taste with pepper. Drizzle the shrimp with lemon juice, then season to taste with salt and pepper.

Drain the linguine, reserving some of the pasta cooking water. Mix the pasta into the bacon mixture, then add 2-3 tablespoons of the cooking water. Transfer the pasta onto plates. Top with the shrimp, garnish with the parsley, and serve.
