2 cloves garlic cloves (chopped)
1 tsp salt
1 tsp sugar
2 tsps black Onion seed
8 Cardamom
8 Curry leaves

1 Cutting board, 1 Small knife, 1 Teaspoon, 1 Large knife, 1 Small bowl, 1 Whisk, 1 Tablespoon

Preparation steps

1.
Cook the rice according to packet instructions.
2.
While the rice is cooking, heat the oil in a skillet and gently fry the onions and garlic with the salt and sugar, stirring from time to time, until they have started to caramelize and brown - this will take about 15 minutes.
3.
Stir in the onion seeds, cardamom pods and curry leaves and cook for 3 more minutes.
4.
When the rice is cooked, drain well and rinse then add to the onion mixture. Stir well and season with salt and pepper.
