- 2 ½ cups yellow Lentils
- 1 Tbsp Oil
- 2 cloves garlic cloves (crushed)
- 1 onion (chopped)
- 2 ½ cups water
- 1 ½ tsps salt
- ½ tsp freshly grated ginger
- 1 Tomato (diced)
- 3 tsps lemon juice
- 1 tsp ground Turmeric
- 1 tsp Cumin
- 1 pinch Chili powder
- 1 pinch Asafoetida
- To garnish
- fresh bay leaves
- 1 tsp mixed peppercorns (lightly crushed)

Preparation steps
1.
Soak the lentils in cold water for 30 minutes.
2.
Put the soaked, drained lentils into a pan with the salt. Cover with water and bring to a boil. Reduce the heat and simmer for 20-25 minutes, until tender and thickened. Add more water, if necessary, to prevent drying out.
3.
Stir in the ginger, tomato, lemon juice and turmeric. Continue simmering.
4.
Heat the oil in a small pan and add the cumin seeds, chilli powder, asafoetida, garlic and onion. Cook for about 5 minutes, stirring until the onion is softened. Stir the mixture into the lentils.
5.
Spoon into a bowl and garnish with the bay leaf and peppercorns.
