- ⅓ cup Rice pudding
- 8 tsps xylitol
- ¼ tsp ground cinnamon (plus extra for sprinkling)
- 4 Tbsps double cream (48% fat)

Preparation steps
1.
Heat the oven to 160°C/140°C fan/325°F/gas 3. Lightly butter 4 small ramekins.
2.
Put 125ml (1/2 cup) milk, 4 tsp rice and 2 tsp xylitol in each dish. Add a little cinnamon and 1 tbsp cream and stir well together.
3.
Put the ramekins in a shallow baking tin and pour in hot water to come a third of the way up the sides of the dishes.
4.
Bake in the oven for about 1 hour until the milk has been absorbed and the tops are golden brown.
5.
Stir the skin into the puddings. Sprinkle with a little extra cinnamon and serve warm.
