- 3 ⅓ cups waxy potatoes (halved)
- 4 ripe vine Tomatoes (halved)
- 4 sprigs thyme
- 1 tsp Garam Masala
- salt
- peppers
- ¼ bunch cilantro (chopped)
- ½ cup Goat cheese (sliced)

Try adding cubes of halloumi cheese for the last 5 minutes of cooking
Preparation steps
1.
Heat the oil in a pan and sauté the potatoes gently for 10-15 minutes until slightly golden.
2.
Add the tomatoes, thyme, garam masala and seasoning and cook for another 10-15 minutes until the potatoes are tender and the tomatoes have softened.
3.
Stir through the coriander, turn off the heat, then top with slices of cheese. Leave the cheese to melt, then serve in bowls.
