Preparation steps

Heat the oil in a pan and sauté the potatoes gently for 10-15 minutes until slightly golden.

Add the tomatoes, thyme, garam masala and seasoning and cook for another 10-15 minutes until the potatoes are tender and the tomatoes have softened.

Stir through the coriander, turn off the heat, then top with slices of cheese. Leave the cheese to melt, then serve in bowls.
