- 5 cups Chicken breasts (cut into bite-sized pieces)
- 2 Tbsps Ghee
- 1 ½ inches fresh ginger (finely chopped)
- 1 clove garlic cloves (finely chopped)
- ½ tsp ground Cumin
- ½ tsp ground cilantro
- ½ tsp cayenne pepper
- 1 tsp Garam Masala
- 2 cups chopped Tomatoes (tin)
- For the rice
- 1 tsp ground Turmeric
- 1 tsp Cumin
- 3 cups chicken stock
- 1 ½ cups Basmati rice

Preparation steps

Fry the chicken in a large frying pan in hot ghee for 1-2 minutes. Add the ginger, garlic, cumin, coriander, cayenne pepper and garam masala, fry briefly and then add the tomatoes and approx. 150 ml water. Add a little salt and simmer gently for around 30 minutes. Stir from time to time and add a little more water if required.

Add the turmeric, cumin and a little salt to the stock and bring to the boil. Add the rice, cover and simmer for around 20 minutes over a low heat.

Finally, season the curry to taste with salt and ground black pepper and arrange on plates with the rice. Serve with naan bread and yoghurt dip if desired.
