- 2 Tbsps vegetable oil
- 4 cups boneless Chicken thigh (cubed)
- 1 onion (peeled and finely sliced)
- 2 cloves garlic cloves (finely sliced)
- ½ inch fresh ginger (grated)
- 1 green chili pepper (finely chopped)
- 1 Tbsp tomato puree
- 1 Tbsp ground cilantro
- 1 Tbsp ground Cumin
- 1 tsp Turmeric
- 1 tsp paprika
- ½ tsp ground cinnamon
- 2 cups canned Tomatoes
- ⅞ cup chicken stock
- salt

Preparation steps
1.
Heat the oil in a large pan and sear the chicken on all sides until golden. Remove from the pan and set aside.

Add the onion, garlic and ginger to the pan and cook until golden. Add the chilli, tomato puree and spices and cook out for 2 minutes.
3.
Add the chicken back to the pan, then cover with tomatoes and stock.
4.
Bring to the boil, reduce the heat and simmer very gently for at least 30 minutes until the chicken is cooked through and the sauce has thickened.
5.
Season well and serve with nan bread.
