- 3 Tbsps honey
- 75 grams melted butter
- Vanilla sugar
- 3 eggs
- 75 grams Buckwheat flour
- 75 grams ground Hazelnuts
- Baking powder
- milk
- 1 tsp finely grated Lemon peel
- ground cinnamon
- 1 generous pinch cloves
- 1 generous pinch allspice
- 1 generous pinch Cardamom
- 1 pinch salt
- butter (for greasing the waffle iron)
Preparation steps
1.
Whisk the honey, melted butter and vanilla sugar together until light and fluffy. Gradually add the eggs, one at a time, whisking well after each addition. Stir in the buckwheat flour, ground hazelnuts and baking powder.

Stir the milk, lemon zest, cinnamon, clove, allspice, cardamom and a pinch of salt into the batter. Cover and let stand for about 10 minutes.

Preheat the waffle iron to medium heat and grease with a bit of butter. Ladle 3-4 tablespoons of the batter into the waffle iron and cook until golden brown on both sides. Remove from the waffle iron, cover with aluminum foil to keep warm and continue with the remaining batter. Serve the waffles with butter and maple syrup, if desired.
