These waffles are a great source of fiber thanks to the spelt flour.
You can use other berries in the sauce as well; strawberries or raspberries are all delicious options.

Ingredients

- For the compote
- ¼ cup sugar
- ½ tsp ground cinnamon
- 1 lemon (juice and zest)
- ⅔ cup dry Red wine
- ⅞ cup Cherry juice
- 1 Tbsp Corn starch
- 3 cups Cherries (pitted)
- For the waffles
- 4 eggs (separated)
- 0.333 cup sugar
- 2 ½ cups Spelt flour
- Baking powder
- 1 cup Buttermilk
- 7 Tbsps sunflower oil
- butter (for greasing)
- powdered sugar (for dusting)
Preparation steps

For the compote, bring the sugar, cinnamon, lemon juice, red wine and cherry juice to the boil in a pan. Simmer on a moderate heat for around 5 minutes. Stir the cornstarch with a little cold water and add to the pan to thicken the sauce. Add the cherries and lemon zest, pour into a bowl and leave to cool.

For the waffles, beat the egg yolks with the sugar until creamy. Mix the flour with a pinch of baking powder and stir into the beaten egg yolks, alternating with the buttermilk and oil. Beat the egg whites with a pinch of salt until they form firm peaks and then fold into the mixture.

Lightly grease the waffle iron and add 1-2 tbsp of batter. Bake the waffles until golden brown, in batches. Dust with icing sugar and serve with the cherry compote.
