Ingredients

18 ouncesTofu
1 ½ tablespoonsNut oil
4 tablespoonssoy sauce
salt
½ teaspoonscayenne pepper
⅞ cupschicken stock
2 teaspoonsCorn starch mixed with 1 tbsp water
2 teaspoonsSesame seeds
½ bunchesscallions
Oyster sauce

Directions

1 Cut the tofu into triangles and mix with the soy sauce.
2 Heat 1 1/2 tbsp oil in a frying pan. Drain the tofu and fry on all sides, then take out of the pan and keep warm.
3 Add 1/2 tsp salt to the soy sauce drained from the tofu and boil, stirring, for about 1 minute. Add the cayenne pepper and boil for 30 seconds, then add the stock and simmer for about 2 minutes. Stir the mixed cornflour into the sauce and simmer for one more minute. Add oyster sauce to taste.
4 Wash and trim the spring onions and shred or cut into strips.
5 To serve, arrange the fried tofu on plates, add a little sauce and sprinkle with sesame seeds. Serve garnished with spring onions.
