- ½ cup caster sugar (superfine)
- 2 cups Soy milk
- 8 egg yolks (beaten)
- 1 tsp vanilla extract
- For the topping
- 6 Tbsps golden caster sugar (superfine)
- To decorate
- 1 Mango (peeled, stone removed, flesh diced)
- 3 Tbsps Shredded coconut
- powdered sugar
Preparation steps
1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Lightly butter 6 ramekins.

Stir together the sugar and milk until the sugar has dissolved. Stir in the egg yolks and vanilla until smooth.

Strain through a sieve into the ramekins. Place the ramekins in a roasting tin or large baking dish and add enough hot water to come halfway up the ramekins.

Cook for 50-60 minutes until just set. Leave to cool, then chill in the refrigerator for at least 2 hours.
5.
Heat the grill.
6.
Sprinkle the custards with sugar and put under the grill until the sugar bubbles and caramelises. Alternatively caramelise the sugar with a blowtorch.
7.
Top with diced mango and coconut and sift over a little confectioners' sugar.
