200 grams Snow peas
2 Mangoes
2 Star fruit
2 scallions
1 tsp freshly grated ginger
1 red chili pepper
4 Tbsps Fruit Vinegar
½ tsp Mustard
cayenne pepper
6 Tbsps sunflower oil

Preparation steps

1.

Rinse snow peas, blanch in salted boiling water for about 4 minutes. Drain, rinse with cold water and drain again.

2.

Peel mangoes, cut in half, stone and cut pulp into strips.

3.

 Peel star fruit and cut into thin slices.

4.

Combine snow peas, mango and star fruit. Arrange on plates.

5.

Rinse scallions, dry and chop finely white parts. Cut green parts into rings.

6.

Halve chile pepper, remove seeds adn chop finely. 

7.

Combine vinegar, ginger, chile pepper, oil and mustard. Season wth salt and cayenne pepper. Add white parts of scallions, mix well. Drizzle salad with dressing and sprinkle with scallion rings. Serve.
