1 tsp peppercorns
½ tsp Mustard seed
4 cloves garlic cloves
25 ozs pork fillets (ready to cook)
2 Tbsps rapeseed oil
4 sprigs rosemary
3 sprigs thyme
2 sprigs Sage

Preparation steps

1.
Heat the oven to 160°C (140°C in a fan oven), 325°F, gas 3 and line a baking tray with grease-proof paper.

In a mortar, finely crush the peppercorns, mustard seeds and two cloves of garlic. Rub this mixture into the pork. Heat the oil in a pan and fry the pork on all sides for 1-2 minutes, then transfer to the baking tray.
3.
Place the herbs on top of the meat and tie in place with kitchen string. Crush the remaining two cloves of garlic with the back of a knife and spread over the pork. Roast for approx. 30 minutes until cooked through.
4.
Rest the pork briefly, and season with salt. Remove the string, cut into slices and serve.
