400 grams baby carrots
250 grams Broccoli
4 Skate wing (about 200 grams)
2 Tbsps White vinegar
salt
80 grams butter
2 Tbsps chopped parsley
3 Tbsps Caper
2 Tbsps lemon juice
1 generous pinch sugar
freshly ground peppers

Preparation steps

Rinse the baby carrots. Trim the broccoli, divide into florets, rinse and drain. Blanch the baby carrots in salted water for about 8 minutes. Blanch the broccoli florets in salted water for about 2 minutes.

Rinse the skate wings and poach in simmering water with 2 tablespoons of vinegar for about 10 minutes.

Beat the butter with the parsley, capers and the lemon juice. Season with salt, sugar and pepper.

Lift the skate wings from the water, drain briefly and place on a warm plate. Drain the baby carrots and broccoli florets briefly and place alongside the skate wings. Drizzle the caper-butter mixture over and sprinkle with freshly ground pepper.
