4 Skate wing (each 250 grams)
150 grams Pastry flour
6 lemons
olive oil (cold pressed)
4 tsps thyme
3 sun-dried Tomatoes (in oil)
salt
peppers (freshly ground)

Preparation steps

Rinse the skate wings and pat dry. Finely grate the peel from 2 lemons. Squeeze the 2 lemons. Drizzle skate wings with lemon juice and season with salt and pepper. Let stand for about 5 minutes. Cut the remaining lemons into thin slices.

Drain the sun-dried tomatoes and chop very finely. Mix with the thyme leaves, 1-2 tablespoons of olive oil and the lemon zest. Season with salt and pepper.

Pat skate wings dry, dredge in the flour and tap off the excess flour. Heat 3 tablespoons oil in a pan and fry the skate wings 1-2 minutes over low heat on both sides. Remove from pan and drain on paper towels. Fry lemon slices in remaining oil in the pan on both sides until golden brown. Season the lemon slices with salt and pepper, then spread on the a platter. Arrange skate wings on top and garnish each with 1-2 tablespoons of the sauce before serving.
