4 Skate wing (ready to cook, about 200 grams)
600 grams waxy potatoes
olive oil
1 Tbsp freshly chopped rosemary
600 grams Broccoli
3 Tbsps olive oil

1 Tbsp Caper
100 milliliters sherry

Preparation steps

Preheat oven grill.

Rinse skate wings and pat dry. Peel potatoes, cut into 1 cm (approximately 3/8 inch) cubes and slowly fry in a nonstick pan in 2-3 tablespoons of oil over low heat for about 10 minutes until they are cooked and golden brown. Finally, add rosemary and season with salt. Rinse broccoli and drain. Sauté in hot butter briefly, add capers and pour in some water and sherry. Over semi-low heat, covered, for about 5 minutes and season with salt. Season fish with salt, sprinkle with pepper and olive oil. Place under oven grill for 2-3 minutes until golden brown on each side.

Divide broccoli onto plates, spoon potato cubes on top and serve with the skate wings.
