- 5 cups Mutton (deboned neck or deboned neck of lamb)
- 2 large white onion (sliced thickly)
- 3 Tbsps vegetable oil
- 2 ½ cups Beef broth
- 2 bay leaves
- 5 ⅓ cups floury potatoes
- salt
- freshly ground peppers
- 2 Tbsps fresh, chopped parsley

Preparation steps
1.
Rinse the meat and pat dry. Cut into bite-sized pieces.
2.
Heat the oil in a large pot. Brown the meat in batches. Remove from the pot when done.
3.
Saute the onion slices in the pot with the mutton fat/oil
4.
Put the meat back in the pot. Season with salt and pepper. Pour in the beef broth and add the bay leaf. Cover and simmer over a low heat for about 1 hour.
5.
Peel the potatoes and cut into eighths. Add them to the stew and bring to a boil over high heat. Turn down the heat and continue cooking over a low heat for another 30 minutes until the potatoes are tender and can be easily pierced with a fork.
6.
Season to taste with salt and pepper. Garnish with the parsley and serve.
