- 3 Tbsps olive oil
- 2 onions (sliced)
- 2 cloves garlic cloves (crushed)
- ⅓ cup smoked Bacon (diced)
- 6 ½ cups stewing Beef (chopped into 2cm cubes)
- 1 ½ cups carrots (peeled and sliced)
- 2 cups Red wine
- 2 cups Beef stock
- Bouquet garni
- thyme
- 2 Tbsps tomato puree
- salt
- peppers

Preparation steps
1.
Heat half the oil in a heavy based pan add the onions and garlic, cook over a gentle heat until soft and browned. Transfer to a casserole dish.
2.
Add the smoked bacon to the pan and cook until slightly browned, transfer to the casserole dish.
3.
Add the remainder of the oil to the heavy based pan, heat and add the beef, brown on all sides. Transfer beef to the casserole dish.
4.
Add the sliced carrots to the heave based pan, cook for 2-3 minutes, transfer to the casserole dish. Deglaze the pan with the red wine, and add to the casserole.
5.
Add tomato puree and stir in the stock. Season with salt and pepper and add the Bouquet Garni.
6.
Cover the casserole with a tight fitting lid and cook in the oven 180°C | 350F | gas 4 for 2 – 2 ½ hours. Top up with water if necessary.
7.
Adjust seasoning to taste. Garnish with a sprig of parsley and serve in individual casserole pots or dishes.
