2 ⅔ cups Celeriac
3 Apple
3 Tbsps lemon juice
1.333 cups low-fat Yogurt
salt
peppers
1 pinch sugar
2 sprigs parsley (or celeriac leaves)
Whole Wheat Bread (for serving)

Preparation steps

1.
Peel and wash the celeriac and cut into slices. Cook in boiling, salted water for about 3 minutes. Drain, place immediately into cold water, then drain again. Peel and quarter the apples and remove the core. Cut into thin sticks. Drizzle lemon juice over the apples. Cut the slices of celeriac into thin sticks and mix with the apples. Wash the parsley (or celeriac leaves) and shake dry. Cut into thin strips.

Season the yoghurt with salt, pepper and a pinch of sugar, then add to the apple and celeriac and stir well. Season to taste with salt and pepper. Divide into bowls, sprinkle the parsley (or celeriac leaves) over the top and serve.

Serve with a few slices of brown bread.
