- ½ cup golden, seedless raisins
- 0.333 cup apple cider vinegar
- 1 medium Orange (zested and juiced)
- 1 Tbsp brown Mustard
- ¼ cup olive oil
- 1 tsp kosher salt
- ½ tsp Black pepper
- ½ head medium, red Cabbage (sliced thin)
- 2 red Beets (with greens)
- 1 large, Granny Smith Apple (julienne)
- ½ medium Red onion (very thinly sliced)
Preparation steps

In a medium bowl soak the raisins in the vinegar and the juice from half of the orange for 10 minutes. Strain and add the soaking liquid to a large bowl.

To the soaking liquid add orange zest, juice from the other half of the orange, mustard, soaked raisins and olive oil. Season with salt and pepper and taste to adjust.
3.
Add the cabbage, beets with greens, apple, onion and toss to coat. Adjust seasoning if necessary.
