1 ripe Pineapple (peeled)
2 Tbsps olive oil
2 Tbsps unrefined, light Muscovado sugar
½ lemon (juice)
To decorate
Pistachio
mint

Preparation steps

1.
Slice the pineapple into rounds, then cut each in half and remove the core.
2.
Heat the oil in a large frying pan.
3.
Stir in the sugar and when the mixture bubbles, add the pineapple. Cook quickly for 2-3 minutes until lightly browned.
4.
Turn, baste with the syrup and sprinkle with the lemon juice.
5.
Place on a serving plate and sprinkle the pistachios on top. Decorate with mint leaves and serve at once.
