Preparation steps

1.

Toast the almonds in a dry pan until fragrant and golden. Peel the pineapple and quarter lengthwise. Slice the pineapple crosswise and drizzle with the honey.

2.

In a skillet, melt 2 tablespoons of butter. Add the Kassler ribs and sear until golden, about 3 minutes per side. Remove and keep warm. Sear the pineapple slices on all sides until golden. Season with salt and pepper, and set aside. Stir the broth into the skillet and bring to a boil. Add the mustard and crème fraîche, and season with salt and pepper.

3.

Cook the broccoli in boiling salted water until tender, about 4 min. Drain the broccoli and add the remaining butter. Season with salt and pepper, and garnish with the almonds.

4.

Serve the pork chops on plates with the seared pineapple, sauce and broccoli.

5.

Serve with mashed potatoes for a complete meal.
