- 1 Tbsp butter
- 1 shallot (finely chopped)
- 1 clove garlic cloves (chopped)
- 1 cup Pearl barley
- ½ bunch Asparagus (woody ends snapped off and cut into short lengths)
- red chili peppers (finely chopped)
- ⅔ cup dry white wine
- 2 cups chicken stock
- 1 small Squid (cut into rings)
- 1 ½ cups mussels
- 1 ½ cups clam
- 1 ½ cups raw Prawn (shell on)
- lemons (juiced)
- salt

Preparation steps
1.
Heat the butter in a pan and sweat the shallot without colouring.
2.
Add the garlic, stir well then add the barley.
3.
Stir well to coat in the butter then add the asparagus and chilli and white wine.
4.
Bring to the boil, then add the chicken stock a little at a time, stirring well while the barley absorbs each addition.
5.
Continue adding stock until the barley is nearly tender. At this point, add the shellfish and stir well.
6.
Once the barley is tender, season well and add the lemon juice before serving.
