2 ½ cups vegetable stock
1 ⅛ cups Bulgur
1 clove garlic cloves (finely chopped)
4 Tbsps olive oil
1 ⅔ cups Seafood (frozen)
1 red pepper (diced)
1 small Zucchini (finely chopped)
2 scallions (sliced)
2 Tbsps fresh parsley (chopped)
1 lemon (juiced)
1 cup cherry Tomatoes (red and yellow, quartered)
0.333 cup Red currant

Preparation steps

1.
Bring the stock to the boil and add the bulgur. Simmer for 2-5 minutes and then turn off the hob and leave to steep for around 15 minutes.

Fry the garlic in a pan in 2 tbsp hot oil. Add the seafood and fry for around 2 minutes. Add the pepper, courgette, spring onions and fry for another 2-3 minutes. Season with salt and ground black pepper and fold in the tomatoes.

Mix together the seafood-vegetable mixture with the bulgur and parsley and season to taste with the lemon juice, olive oil, salt and ground black pepper. Leave to steep for at least 20 minutes.
4.
Fold in the redcurrants and divide between four bowls.
