1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Mortar, 1 Slotted spatula

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Toss the carrots in half the oil and season to taste with salt and pepper. Put into a baking dish or tin and cook for about 25 minutes until tender. Set aside to cool slightly.
3.
Place the couscous in a bowl. Cover with the boiling water, then cover with plastic wrap and leave to stand for 10 minutes. Season to taste and fluff with a fork.
4.
In a small bowl, whisk the lemon juice and remaining oil until combined. Add the couscous, orange segments and carrots and gently toss.
5.
Put onto a serving plate and scatter over the orange zest. Garnish with basil and sprinkle with a little ground cinnamon.
